Red Pepper Egg-in-a-Hole Recipe
The other day I came across this recipe from SkinnyTaste while I was browsing on Twitter at work. I lack a decent amount of talent in the kitchen and this recipe looked simple and delicious enough to try! On Sunday morning, I treated my roommate Rob and myself to some delicious Red Pepper Egg-in-a-holes. I never realized how sweet red peppers were and it was delectable with the eggs. It really was as easy as it looks and I added some raw onions to the top for that extra crunch. Yum! Let me know if you try it out too!
Ingredients (serves 4)
Extra Virgin Olive Oil
1 Bell Pepper cut into 4 1/2" thick rings
4 Large eggs
Salt, Pepper
Heat a drizzle of olive oil into a skillet on medium heat. Add the pepper slices and let them cook for a minute. Next, add the egg into the center of the pepper slice. Personally, I mixed up the egg before cooking them since I don't like them to be too runny. However, you can just crack the egg directly into the pepper slice and let it cook until the egg whites are mostly set. Don't forget to add in your salt and pepper at this point. After 2-3 minutes, carefully flip the pepper slice over and cook for another minute for over easy eggs (and longer for over well eggs). Then you're done! A super quick breakfast for people like me who hate waiting for their food. I added freshly minced onions to mine but next time I think I'll try adding cheese!

Yum, this looks really really good. I've tried the egg-in-hole thing with bread but never red pepper and I definitely feel like I'm missing out now.
